BJ makes slices, marmalades and jams for charity.

The Sutherland Shire Branch of the Australian Red Cross raises money for worthwhile initiatives - locally, throughout Australia and also overseas.

We hold four street stalls each year. Please support our old fashioned street stalls.

Rice Bubble Crunch Slice (easy non-bake)
  • 4 cups rice bubbles
  • 4 oz butter or margarine
  • 1/3 cup white sugar
  • 2 tblspns honey
  • 1 cup of glace peel (orange & lemon), or slivered almonds, or unsalted peanuts, or macadamia nuts etc.

Method : combine butter, sugar and honey in a saucepan, and boil for 5 mins or until a nice golden colour. Stir in rice bubbles & peel (or nuts). Spread quickly into slice pan with the back of a soup spoon.

Note: cut when still hot but leave it in the slice tin until set. Remove from slice tin & refrigerate or freeze until required.

 

Chocolate Crackle Slice (easy non-bake)
  • 2 cups rice bubbles
  • 6 oz copha
  • 2 tblspns of cocoa powder
  • 1 cup icing sugar or caster sugar
  • 1 cup coconut
  • 1 cup milk powder (full cream or skim)
  • Topping 4 oz chocolate, 2 oz extra copha & few drops of peppermint essence.

Method : combine dry ingredients in a bowl. Stir in melted copha. Spread into slice pan with the back of a soup spoon.

Topping: melt, combine and ice the slice when cool.

Note: Leave in the slice tin until cold. And cut when cold. Travels well. Refrigerate or freeze until required.

 

White Christmas Slice (easy non-bake)
  • 1 cups rice bubbles
  • 8 oz copha
  • 1 cup skim milk powder (or full cream milk powder)
  • 1 cup sifted icing sugar
  • 1 cup coconut
  • 1.5 cups of mixed fruit (red & green cherries, apricot, sultanas, peel, glace pineapple etc that look nice).

Method : combine dry ingredients in a bowl. Stir in melted copha. Spread into slice pan with the back of a soup spoon.

Note: Score the top with a sharp knife when warm - to make it easy to cut when cold. Refrigerate in the slice tin until cold. Great to freeze until required.

 

Mum's Wheat Bix Slice (easy bake)
  • 4 Wheat bix lightly crushed
  • 1/2 cup raw or brown sugar
  • 1 cup coconut
  • 1 cup self raising flour
  • 1 egg
  • 1 teaspn of vanilla essence
  • 5 oz margarine or butter
  • 3/4 cup raspberry or strawberry jam
  • Topping 1 cup of extra coconut, 1/4 cup of sugar, 1 extra egg

Method : combine dry ingredients in a bowl. Stir in melted butter & egg. Spread into slice pan with the back of a soup spoon. Bake for 10 mins in a moderate oven.

Heat jam in microwave for 10 sec and spread over HOT slice. Combine extra coconut and extra egg in a bowl - then spread topping over the jam. Return to oven to cook another 5 to 10 mins.

Note: Cut when hot - but leave in the slice tin until cool. Refrigerate or freeze until required.

 

Honey Oat Health Slice (easy bake)

  • 1 cup oats
  • 1 cup of craisins (dried cranberries or sultanas)
  • 1/2 cup wholemeal self raising flour (sifted)
  • 1/2 cup raw or brown sugar
  • 1/2 cup coconut
  • 155 gram (5oz) butter or margarine
  • 1 tablespn honey

Method : combine dry ingredients in a bowl. Stir in melted butter & honey. Mix until clingy. Spread into slice pan with the back of a soup spoon. Bake for 15 to 20 mins in a moderate oven.

Note: Cut when hot - but leave in the slice tin until cool. Refrigerate or freeze until required.

Sutherland Shire Branch

The Sutherland Shire Branch of the Australian Red Cross raises money for worthwhile initiatives, such as our recent drought relief "care packs" for farming families affected by the recent droughts. Each pack contained approx $80 of personal care items - deodorant, tissues, toilet paper, band aids, washing powder, shampoo, soap and aerogard etc. Sutherland Shire Branch raised over $15,000 over two years to help Aussie Farmers in western NSW.

Another related initiative was the "adopt a branch" where the Sutherland Shire branch (with forty members) "adopted" the smaller Kumara branch (with six local members). Kumara is in remote NSW past Deniliquin. Together these two branches worked to upgrade the lighting, electricals and kitchen of the Kumara community hall. Now the hall is safe, insurance is re-instated and is being used by community meetings, 21st birthday parties and other functions in this remote farming community. Thanks to Patron Peter Eyland, for completing this project by the donation of a useful Microwave oven.

Footnote: Kumara has recently received a few centimetres of rain, & have put in a wheat crop. This will be the first harvest for many years. Things look promising for the community of Kumara in western NSW.

 

2013 Sutherland Shire Branch initiatives to raise money for :

  • Red Cross "Young Parent Program"
  • Branch local schools project - Red Cross Calling in March 2013 into Eleven (11) local High Schools or Senior (Secondary) Colleges in the Sutherland Shire.
